This is my own person blog that I am maintaining for fun.  It represents my approach toward cooking, which is very detail oriented, methodical, and procedural.  Frankly, I have lost count as to how many times a dish has gone from terrible to amazing or vice versa with the adjustment of just one detail, one ingredient, or one technique.  For me, cooking is that sensitive and should be respected as such.

 

Most of my recipes are based off of CooksIllustrated (CI) recipes, but I rarely if ever find them satisfactory.  I will almost always adjust details and techniques, ranging from minor changes to complete overhauls until I deem the results good enough.  I have very high standards and what most home cooks would see as successful dishes, I would probably be embarrassed of and throw in the trash.  If I am determined to make something correctly, I will literally make it hundreds of times until I get it right.  This blog is a minor showcase of some of that effort.
