Tofu steak with mushrooms and beansprouts

























This is pretty straight forward and easy to make.  It's a great healthy and light dinner that can be made quickly.

ingredients:
serves 1
1.  1 block of firm tofu, halved length wise, NOT width wise
2.  1/2 cup of any mushrooms
3.  1/4 cup bean sprouts
4.  1 clove Garlic
5.  1 TBL sliced Green onions
6.  AP flour
7.  salt
8.  pepper
9.  Sesame oil
10.  1 TBLSoy sauce
11.  1 TBL Mirin
12.  1 TBL sake
13.  1 tsp sugar

recipe:
1.  Halve a block of firm tofu length wise, NOT width wise.  Wash both sides of tofu in cold water for 10 seconds.  Transfer to paper towel lined plate and dry completely.
2.  Brush outside of mushrooms with damp cloth then chop into 1/4" slices.
4.  Wash bean sprouts and completely dry
5.  mince garlic and finely slice green onion
6.  Heat up a non-stick pan over medium high heat with 2 tsp sesame oil for 2 minutes.
7.  Generously salt and pepper on one side of the tofu.  Sprinkle on a solid amount of AP flour on the same side and spread it around with your fingers.
note: - getting the salt level right is key for this dish.  The sauce has to be made somewhat sweet or else it will taste too salty when the rice soaks up the sauce.  In order to balance this sweetness, the tofu must be salted generously while the mushrooms and beansprouts must be salted solidly.
8.  Place the tofu, seasoned side down, into the pan.  Place a generous amount of salt and pepper on the top side, then sprinkle on a solid amount of Ap flour and rub and spread with your fingers.  allow to cook for 2-5 min, until bottom is crusty and golden brown.
9.  While it cooks, add soy sauce, mirin, sake, and sugar into a small bowl.  Taste and adjust sugar.  There should only be a hint of saltiness to it and it should have an obvious sweetness to it without being too sweet.
10.  After bottom of tofu browns, flip over and cook another 2-5 min until bottom is golden and crusty.  Transfer tofu to a plate.
11.  Add another tsp of sesame oil to pan and add garlic.  Cook until fragrant, then add mushrooms and beansprouts.  Add a solid pinch of salt and pepper and cook, mixing frequently for 3 minutes.
12.  Add in sauce and cook stirring frequently, for 1 more minute.
13.  Pour everything over the tofu.  Garnish with green onions.
14.  Serve with white rice.
