Japanese Pork Bowl




















God I love japanese food.  This is a simple dish that can literally be made in 10 minutes.  It tastes super fresh and is so very tasty.

ingredients:
For 1 person

1. 4-5 slices of pork belly cut in half into 8-10 2" squares.
note:
This is NOT bacon.  Do not use bacon for this.  You can find raw pork belly slices in asian supermarkets either fresh or frozen.
2.  1/2 of a medium onion cut into 1/4" wedges
3.  1/2 cup of any other vegetable also cut into 1/4" wedges (I had bell pepper on hand so I used that)
4.  1 TBSP soy sauce
5.  1 TBSP sake (or dry white wine)
6.  1 TBSP mirin
7.  1 tsp grated ginger
8.  1 clove grated garlic
9.  1/2 tsp sugar
10.  Sprinkle of flour
11.  Sesame oil

garnish ingredients:
12.  8-10 rough 2" chunks of cold lettuce - raw.  will not be cooked
13.  Bowl of slightly cooled white rice (place rice into bowl just before you begin cooking)
14.  White part of long green onion finely julienned
15.  Toasted white sesame seeds
16.  Sprinkle of 7 flavor japanese chili powder (I actually just used a sprinkle of mexican chili powder and it surprisingly tasted great)
17.  Freshly ground black pepper

recipe:
1.   Heat pan over medium high heat and very lightly oil with sesame oil.
2.  Combine soy sauce, sake, mirin, ginger, garlic, and sugar into a small bowl.  Mix well and taste.  The sauce should have an obvious and pleasant sweetness to it but not be overly sweet.  If the sauce is not sweet enough, add more sugar.
3.  Sprinkle on a very light coating of flour onto one side of the pork, then place into pan, flour side down.  Saute for a few minutes but as soon as you see it BEGIN to brown, flip it over.
note:
Its very important not to overcook the pork.  You are NOT looking for a nice crust.  As soon as you begin to see any browning, flip it over.
4.  Cook second side just until the pinkness of the raw pork is gone (you will finish cooking it later)
5.  Transfer pork to a plate then add more sesame oil if necessary to have around a tablespoon of oil in the pan.
6.  Add onion and other vegetable and saute on medium high heat while stirring for 2 minutes
7.  Add sauce into pan with vegetables and cover with a lid for 2 minutes
8.  Top rice with lettuce then transfer cooked vegetables on top of the lettuce leaving as much sauce as possible in the pan.
9.  Drop pork pieces back into the pan and coat the pork while reducing the sauce for 1 minute.
10.  Place pork pieces on top of the vegetables then pour the sauce on top.
11.  Sprinkle on chili powder and toasted white sesame seeds.
12.  Add a pinch of freshly ground black pepper.
13.  Garnish with julienned white part of a long green onion.
14.  Serve and eat immediately while it is still hot and fresh.
